I’ll admit it. I jumped on the Kale Train pretty late in the game. Having said that, I have been enjoying a variety of kale salads for the past little while now and whenever I involve kale in my life I feel like a healthy superstar.
Kale chips are the obvious way to fully integrate kale into your life. They are so easy and delicious. Kale yeah!
Quick & Easy Kale Chips
Kale (medium sized bunch, about 4-6 stems)
2 Tbsp Extra Virgin Olive Oil
1/4 Cup of Parmesan Cheese
Salt and Pepper, to taste
Preheat oven to 300 degrees F. Line a baking pan with parchment paper.
Wash the kale and remove the middle stems. (I pull from the top of the stem down, which removes most of the leaves, and then pull any remaining leaves off piece by piece).
Dry the kale. (I don’t have a salad spinner, so I just shake off as much water as I can and dab the pieces using a clean kitchen towel or paper towel. Whichever way you go, try to get them as dry as possible).
Tear the kale into chip size pieces. Place in bowl and drizzle with oil. Rub oil into leaves.
Add parmesan, salt, and pepper. Massage well into leaves.
Spread pieces evenly on pan.
Bake for 7 -10 minutes before turning, and baking for another 7-10 minutes.
Remove from oven and allow a few minutes to cool.
